1 pound large shrimp, peeled and deveined

4 cups chicken or vegetable broth

2 cups green cabbage, thinly sliced

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 medium tomatoes, diced

1 tablespoon fish sauce

1 teaspoon soy sauce

1 teaspoon brown sugar

1-2 red chilies, sliced (optional, for heat)

2 green onions, chopped (for garnish)

1 cup fresh cilantro leaves, chopped (for garnish)

Salt and pepper to taste

Instructions
 

In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.

      Add the diced tomatoes to the pot, stirring occasionally until they begin to break down and become saucy, about 3-4 minutes.

        Pour in the chicken or vegetable broth, and bring the mixture to a gentle simmer.

          Add the sliced cabbage to the pot, along with fish sauce, soy sauce, and brown sugar. Allow to simmer for 5-7 minutes until the cabbage softens.

            Gently add the shrimp to the soup, cooking until they turn pink and opaque, about 3-4 minutes.

              Adjust seasoning with salt, pepper, and sliced chilies (if using).

                Remove the pot from heat, and stir in the chopped cilantro.
