1 pound large shrimp, peeled and deveined

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 bell pepper (red or yellow), sliced

1 cup sugar snap peas

1 cup broccoli florets

2 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce (low-sodium)

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Fresh cilantro for garnish

In a medium bowl, toss the shrimp with cornstarch until well coated. This will help create a nice crunch when stir-fried.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the shrimp in a single layer. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      In the same skillet, add the sliced bell pepper, sugar snap peas, and broccoli florets. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

        Add the minced garlic and grated ginger to the vegetables, and stir-fry for an additional 1 minute until fragrant.

          In a small bowl, mix together the soy sauce, honey, rice vinegar, and sesame oil. Pour this sauce over the vegetables, and stir to combine.

            Return the cooked shrimp to the skillet and toss everything together, ensuring all ingredients are well coated in the sauce. Cook for an additional 1-2 minutes to heat everything through.

              Season with salt and pepper to taste.
