Ingredients
  

1 cup fresh raspberries (plus extra for topping)

2 tablespoons chia seeds

1 cup almond milk (or any milk of choice)

2 tablespoons maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

A pinch of salt

1/2 cup granola (for layering)

Fresh mint leaves (for garnish)

Instructions
 

In a blender, combine the fresh raspberries, almond milk, maple syrup, vanilla extract, and a pinch of salt. Blend until smooth.

    Pour the blended mixture into a mixing bowl. Add the chia seeds and stir well to combine.

      Allow the mixture to sit for about 10 minutes, then stir again to break any clumps of chia seeds.

        Cover the bowl and refrigerate for at least 2 hours, or until it thickens to a pudding-like consistency.

          Once the chia pudding is set, remove it from the fridge and stir it again.

            In serving glasses or bowls, layer the raspberry chia pudding with granola—start with pudding, then a layer of granola, followed by more pudding, and top it off with a final layer of granola.

              Finish by garnishing with fresh raspberries and mint leaves on top for a vibrant presentation.
