4 large russet potatoes

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup green onions, finely chopped

1/4 cup milk

2 tablespoons butter

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the russet potatoes under cold water and dry them thoroughly. Prick each potato several times with a fork to allow steam to escape during baking.

      Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

        Once the potatoes are done, remove them from the oven and let them cool for about 10-15 minutes until they are easier to handle.

          Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border of potato in each skin to maintain structure.

            To the mixing bowl, add sour cream, half of the cheddar cheese, crumbled bacon, green onions, milk, butter, salt, pepper, and smoked paprika (if using). Mash the mixture together until smooth and creamy.

              Spoon the potato mixture back into the potato skins, heaping it up slightly for a loaded effect.

                Sprinkle the remaining cheddar cheese on top of each stuffed potato.

                  Place the filled potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                    Once cooked, remove them from the oven and let cool for a few minutes. Garnish with additional green onions and parsley if desired before serving.
