1 lb pork tenderloin, sliced into 1-inch medallions

2 tablespoons olive oil

Salt and pepper, to taste

1 cup heavy cream

1/2 cup crumbled blue cheese

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Fresh chives, chopped (for garnish)

Instructions
 

Prepare the Pork: Season the pork medallions with salt and pepper. Heat the olive oil in a large skillet over medium-high heat.

    Sear the Medallions: Once the oil is hot, add the pork medallions in a single layer. Cook each side for about 3-4 minutes until they are golden brown and cooked through. Remove them from the skillet and set aside.

      Make the Blue Cheese Sauce: In the same skillet, reduce the heat to medium-low. Add the heavy cream, stirring to combine with the remnants in the pan.

        Incorporate the Cheese and Seasonings: Add the crumbled blue cheese, Dijon mustard, and garlic powder into the cream. Stir continuously until the cheese melts and the sauce thickens, about 4-5 minutes. If the sauce gets too thick, you can thin it by adding a splash of water or additional cream.

          Return the Pork: Add the pork medallions back into the skillet with the blue cheese sauce. Allow them to simmer in the sauce for another minute or two to coat thoroughly.

            Serve: Transfer the pork medallions to plates and spoon the blue cheese sauce over the top. Garnish with chopped fresh chives.
