2 pounds beef chuck, cut into 1-inch cubes

1 tablespoon vegetable oil

2 medium onions, chopped

3 cloves garlic, minced

4 carrots, sliced

3 celery stalks, sliced

2 cups beef broth

2 cups diced potatoes (about 2 large potatoes)

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

1 cup frozen peas (optional)

2 tablespoons chopped fresh parsley (for garnish)

Brown the Beef: In a large Dutch oven or heavy pot, heat the vegetable oil over medium-high heat. Add the beef in batches, searing each piece until browned on all sides. Remove the beef from the pot and set aside.
