Ingredients

1 bag of pita chips

1 cup hummus (store-bought or homemade)

1 cup diced cucumber

1 cup cherry tomatoes, halved

1 cup crumbled feta cheese

1/2 cup kalamata olives, pitted and sliced

1/2 small red onion, finely chopped

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Instructions

Preheat the oven to 350°F (175°C).

On a large baking sheet, spread the pita chips in an even layer.

Warm the pita chips in the oven for about 5 minutes until they are slightly crispy.

While the chips are toasting, in a small bowl, combine the diced cucumber, halved cherry tomatoes, chopped red onion, kalamata olives, and parsley.

Drizzle the olive oil and lemon juice over the vegetable mixture, then season with salt and pepper to taste. Mix well.

Once the pita chips are warmed, remove them from the oven.

Spread a generous layer of hummus over the toasted pita chips, covering them well.

Top the hummus with the vegetable mixture, ensuring an even distribution.

Finally, sprinkle the crumbled feta cheese over the top.

Serve immediately for best texture, or you can place them back in the oven for a couple of minutes to slightly warm the toppings.
