4 slices of sourdough bread

1 cup fresh mozzarella cheese, sliced

1 medium ripe tomato, sliced

¼ cup fresh basil leaves

2 tablespoons pesto (store-bought or homemade)

2 tablespoons unsalted butter, softened

Salt and pepper to taste

Balsamic glaze, for drizzling (optional)

Instructions
 

Prepare the Bread: Spread a thin layer of softened butter on one side of each slice of sourdough bread. This will help achieve a golden-brown crust when grilling.

    Assemble the Sandwich: On the unbuttered side of two slices, layer the fresh mozzarella slices evenly. Place the tomato slices on top of the mozzarella, followed by a few leaves of fresh basil. Drizzle the pesto over the basil. Sprinkle with salt and pepper for added flavor.

      Complete the Sandwich: Top with the remaining slices of bread, pressing down gently. You should have two sandwiches ready to go.

        Grill the Sandwiches: In a skillet over medium heat, place the sandwiches buttered side down in the hot pan. Cook for about 3-4 minutes, or until the bread is golden brown and crisp.
