Irish Bacon, Cabbage, and Potato Soup

4 slices of Irish bacon, diced

1 medium onion, chopped

3 medium potatoes, peeled and diced

4 cups vegetable broth

2 cups green cabbage, shredded

1 cup heavy cream

2 tablespoons unsalted butter

1 teaspoon fresh thyme

Salt and pepper to taste

Chopped chives, for garnish

Instructions
 

In a large pot, melt the unsalted butter over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes.

    Remove the bacon from the pot and set it aside, leaving the drippings in the pot.

      Add the chopped onion to the pot and sauté in the bacon drippings until soft and translucent, about 3-4 minutes.

        Stir in the diced potatoes and cook for an additional 5 minutes, allowing them to soak up some flavor.

          Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and cook until the potatoes are tender, about 15 minutes.

            Add the shredded cabbage and thyme, and continue to simmer for another 5-10 minutes until the cabbage is tender.

              Using an immersion blender, carefully blend the soup until smooth and creamy. If you prefer a chunky texture, blend only half of the soup.

                Stir in the heavy cream, and season with salt and pepper to taste. Reheat the soup gently, but do not bring it back to a boil.

                  Finally, fold in the reserved crispy bacon pieces into the soup, saving some for garnish if desired.
