4 slices of sourdough bread

1 cup Gouda cheese, shredded

1 cup mixed mushrooms (shiitake, cremini, and button), sliced

1 medium onion, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh thyme sprigs (optional for garnish)

Roast the Mushrooms and Onions:

    - Preheat your oven to 400°F (200°C).

      - In a mixing bowl, combine the sliced mushrooms and onions. Drizzle with olive oil and season with garlic powder, salt, and pepper. Toss to coat evenly.

        - Spread the mixture on a baking sheet and roast in the oven for 20-25 minutes, or until the mushrooms are golden and the onions are soft, stirring halfway through.

          Prepare the Bread:

            - While the mushrooms and onions are roasting, butter one side of each slice of sourdough bread with unsalted butter.

              Assemble the Sandwich:

                - On the non-buttered side of two slices of bread, layer half of the shredded Gouda cheese evenly.
