1 lb ground beef (or ground turkey)

1 small onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 tablespoon taco seasoning

1 cup shredded cheddar cheese

1 cup tortilla chips, crushed

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened.

      Stir in minced garlic and cook for an additional minute until fragrant.

        Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks (about 7-10 minutes). Drain any excess fat.

          Mix in the black beans, corn, diced tomatoes (with their juices), and taco seasoning. Stir until well combined. Season with salt and pepper to taste.

            Transfer the mixture to a greased 9x13 inch baking dish. Spread it evenly.

              Sprinkle crushed tortilla chips over the top, followed by shredded cheddar cheese.

                Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden brown.

                  Remove from the oven and let it cool for a few minutes before serving.

                    Garnish with chopped cilantro and serve with avocado slices on the side.
