4 large eggs

1/4 cup milk

Salt and pepper to taste

4 slices of ham

1 cup shredded cheese (cheddar or your favorite blend)

4 large tortillas (flour or whole wheat)

1 tablespoon olive oil

Fresh chives or parsley for garnish (optional)

Instructions
 

In a medium bowl, whisk together the eggs and milk until fully blended. Season with salt and pepper.

    Heat a non-stick skillet over medium heat and add the olive oil. Pour in the egg mixture and cook, stirring gently, until just set but still creamy (about 3-4 minutes). Remove from heat and let cool slightly.

      Lay out a tortilla on a flat surface. Place 1 slice of ham in the center, followed by a generous scoop of the scrambled eggs, and then sprinkle with 1/4 cup of shredded cheese.

        Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, ensuring the filling is secure inside.

          Repeat the process with the remaining tortillas, ham, eggs, and cheese.

            Heat the skillet over medium heat again and place the roll-ups seam side down in the pan. Cook for 2-3 minutes until golden and crispy. Flip and cook the other side for another 2-3 minutes.

              Remove from heat and allow to cool for a minute before slicing each roll-up in half.
