1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 pound ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

1 teaspoon cumin

1 teaspoon chili powder

8 oz cream cheese, cubed

2 cups shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Tortilla chips for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until softened.

    Add the minced garlic to the skillet and cook for an additional minute until fragrant.

      Increase the heat to medium-high and add the ground beef. Cook until browned and fully cooked, breaking it apart with a spatula. Drain excess fat if necessary.

        Stir in the black beans, diced tomatoes with green chilies, corn, cumin, and chili powder. Allow the mixture to simmer for 5 minutes, stirring occasionally.

          Lower the heat to medium-low and add the cream cheese, stirring until smooth and creamy.

            Gradually add the shredded cheddar cheese, stirring until fully melted and well incorporated.

              Season with salt and pepper to taste. If the queso is too thick, add a splash of milk or broth to reach your desired consistency.

                Remove from heat and garnish with freshly chopped cilantro before serving warm with tortilla chips.
