Ingredients

2 lbs Yukon Gold potatoes, peeled and quartered

½ cup unsalted butter

1 cup whole milk (or heavy cream for extra richness)

1 teaspoon garlic powder

Salt and black pepper, to taste

Fresh chives or parsley, finely chopped (for garnish)

Instructions

Begin by placing the quartered potatoes into a large pot and cover them with cold water. Add a generous pinch of salt to the water.

Bring to a boil over medium-high heat, then reduce the heat and simmer until the potatoes are fork-tender, about 15-20 minutes.

While the potatoes are cooking, place the unsalted butter in a small saucepan over medium heat. Allow it to melt, then continue cooking, swirling the pan occasionally until the butter foams and turns a golden brown color, with a nutty aroma, about 5-7 minutes. Be careful not to let it burn.

Once the potatoes are cooked, drain them well and return them to the pot.

Pour the browned butter and any brown bits from the bottom of the pan over the potatoes, along with the milk, garlic powder, salt, and pepper.

Use a potato masher or hand mixer to mash the potatoes until they reach your desired creaminess. Adjust the consistency with more milk if necessary.

Taste and adjust seasoning with additional salt and pepper if needed.

Once smooth and creamy, transfer the mashed potatoes to a serving bowl.

Garnish with fresh chopped chives or parsley for a pop of color and flavor.
