Ingredients

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup granulated sugar (adjust to taste)

5 cups cold water

1/2 cup frozen strawberries or raspberries

1/2 cup heavy whipping cream

1/4 cup powdered sugar

Ice cubes for serving

Fresh lemon slices and mint leaves for garnish

Instructions

In a medium saucepan, combine the freshly squeezed lemon juice and granulated sugar over medium heat. Stir until the sugar dissolves completely.

Remove from the heat, and add 2 cups of cold water to the mixture. Stir well and let it cool completely.

Once cooled, mix in the remaining 3 cups of cold water. Taste and add more sugar if needed. Set aside.

In a blender, combine the frozen strawberries or raspberries with a splash of water and blend until smooth. Strain the mixture through a fine mesh sieve into a bowl to remove seeds if desired.

In a separate mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form.

To serve, fill a glass halfway with the pink lemonade, add a few ice cubes, then spoon a generous dollop of whipped cream on top.

Drizzle the berry puree over the whipped cream for an artistic finish.

Garnish with a slice of lemon and a sprig of mint on top for the perfect refreshing touch.
