1 lb (450g) beef stew meat, cut into bite-sized pieces

2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 bell pepper (any color), diced

4 cups beef broth (low sodium)

1 can (14.5 oz) diced tomatoes, with juices

2 cups green beans, trimmed and cut into 1-inch pieces

1 teaspoon dried thyme

1 teaspoon dried basil

1 bay leaf

Salt and pepper, to taste

2 cups potatoes, diced (about 2 medium potatoes)

1 cup frozen corn

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the meat and set it aside.

    In the same pot, add the chopped onion and garlic, sautéing for about 3-4 minutes until the onion is translucent and fragrant.

      Add the sliced carrots, diced celery, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.

        Return the browned beef to the pot along with the beef broth, diced tomatoes (with juice), green beans, thyme, basil, bay leaf, salt, and pepper. Stir until well combined.

          Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, allowing the flavors to meld.

            Stir in the diced potatoes and corn. Continue to simmer for another 20-30 minutes, or until the vegetables and beef are tender.

              Taste and adjust seasoning with more salt and pepper if necessary. Remove the bay leaf before serving.

                Ladle the soup into bowls, and garnish with fresh parsley before serving.
