Ingredients

1 sheet of vegan puff pastry (thawed)

1 cup fresh strawberries, sliced

1 tablespoon maple syrup

1 teaspoon lemon juice

1 cup canned coconut cream (chilled)

2 tablespoons powdered sugar

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 tablespoon plant-based milk (for brushing)

Fresh mint leaves (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Strawberries: In a small bowl, combine sliced strawberries, maple syrup, and lemon juice. Mix gently and set aside to marinate for about 10 minutes.

Make the Cream Filling: In a mixing bowl, combine the chilled coconut cream, powdered sugar, vanilla extract, and cornstarch. Whip until smooth and creamy. You can use a hand mixer or whisk.

Roll Out the Puff Pastry: On a lightly floured surface, roll out the vegan puff pastry sheet to thin it slightly. Cut it into a rectangle (about 8x10 inches).

Shape the Danish: Using a sharp knife, score a border (about 1 inch) around the edges of the pastry. This will create a rim. Prick the center of the pastry with a fork to prevent it from puffing too much.

Assemble the Filling: Spread the coconut cream mixture within the scored border and top it with the marinated strawberries evenly.

Brush the Edges: Lightly brush the borders of the pastry with a tablespoon of plant-based milk for a golden finish.

Bake the Danish: Place the assembled Danish onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crisp.

Cool and Serve: Once baked, remove from the oven and allow to cool for about 10 minutes. Garnish with fresh mint leaves before slicing.
