Ingredients
  

2 cups all-purpose flour

1 ½ cups sugar

½ cup unsalted butter, softened

1 cup whole milk

3 large eggs

1 tablespoon vanilla extract

2 tablespoons baking powder

1 cup fresh mixed berries (strawberries, raspberries, blueberries)

1 cup heavy whipping cream

2 tablespoons powdered sugar

Fresh mint leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Prepare the Batter: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.

      Add Wet Ingredients: Beat in the eggs one at a time, then stir in the milk and vanilla extract.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour and baking powder. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

          Add Berries: Gently fold in the mixed berries, being careful not to crush them.

            Bake the Cakes: Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

              Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

                Whip the Cream: In a chilled mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form.

                  Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of whipped cream on top, followed by a sprinkle of fresh berries. Carefully place the second cake layer on top.

                    Frost and Garnish: Use the remaining whipped cream to frost the top and sides of the cake. Decorate with the remaining mixed berries and garnish with fresh mint leaves.
