4 medium-sized russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

4 tablespoons unsalted butter, melted

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper to taste

Fresh chives, chopped for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash the potatoes thoroughly and dry them with a towel.

      Using a sharp knife, carefully make incisions along the length of each potato, about 1/4 inch apart. Be careful not to cut all the way through; you want them to remain intact at the bottom.

        Place the potatoes on a baking sheet lined with parchment paper.

          In a mixing bowl, combine melted butter, olive oil, minced garlic, dried thyme, paprika, salt, and pepper. Mix well.

            Brush the butter mixture generously over the potatoes, ensuring it seeps into the cuts.

              Sprinkle half of the cheddar and mozzarella cheese between the slices, allowing some to fall onto the baking sheet.

                Cover the baking sheet with aluminum foil and bake the potatoes for 30 minutes.

                  After 30 minutes, remove the foil and bake for an additional 15 minutes.

                    Remove the potatoes from the oven and sprinkle the remaining cheeses and grated Parmesan over the top.

                      Bake for another 10-15 minutes, or until the cheese is bubbly and golden brown.

                        Once cooked, remove from the oven and let them rest for 5 minutes.

                          Garnish with chopped chives before serving.
