12 oz cheese tortellini

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup spinach, fresh

1/2 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

In a large pot, bring salted water to a boil and cook the tortellini according to package instructions until tender. Drain and set aside.

    In the same pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.

        Add the can of diced tomatoes (with juice) to the pot, followed by the Italian seasoning, salt, and pepper. Simmer for about 5 minutes to allow the flavors to meld.

          Add the fresh spinach to the sauce and stir until wilted, about 2 minutes.

            Pour in the heavy cream and stir to combine, bringing the sauce back to a gentle simmer.

              Gently fold in the cooked tortellini and let them warm through in the sauce for about 2 minutes.

                Remove from heat and stir in the grated Parmesan cheese until melted and creamy.

                  Taste and adjust seasoning if necessary.
