Tuscan Chicken and Gnocchi

1 pound boneless, skinless chicken thighs, cubed

1 package (16 oz) potato gnocchi

2 cups fresh spinach

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1 cup chicken broth

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions (usually about 2-3 minutes until they float). Drain them and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add olive oil. Season the cubed chicken thighs with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add a little more olive oil if needed, and sauté the minced garlic for about 1 minute until fragrant. Add the cherry tomatoes and cook for 3-4 minutes until they start to soften.

        Combine Ingredients: Pour in the chicken broth and heavy cream. Stir in the red pepper flakes and add the spinach. Let it simmer for about 3-4 minutes until the sauce thickens slightly.

          Add Chicken and Gnocchi: Return the cooked chicken to the skillet along with the gnocchi. Gently toss everything together to coat with the sauce. Let it simmer for another 2-3 minutes to heat everything through. Adjust seasoning with salt and pepper as necessary.

            Serve: Plate the Tuscan chicken and gnocchi onto individual plates. Garnish with fresh basil and a generous sprinkle of grated Parmesan cheese.
