Instructions
In a large pot, heat the coconut oil over medium heat until melted.
Add the diced onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
Add the ground turmeric, cumin, and coriander to the pot, stirring well to toast the spices for about 30 seconds.
Pour in the chicken broth and bring it to a gentle simmer.
Add the sliced carrots, celery, and diced sweet potatoes. Cook for 10-15 minutes, until the vegetables are tender.
Stir in the shredded chicken and chopped kale or spinach. Let it simmer for an additional 5 minutes to heat through and wilt the greens.
Season the soup with salt, pepper, and fresh lemon juice, adjusting to taste.
Serve hot, garnished with fresh parsley or cilantro.
Notes
Feel free to substitute kale with spinach or add other vegetables as desired.
