Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until translucent.
Add the minced garlic and ground turkey to the skillet. Cook, breaking it apart, until the turkey is browned and fully cooked, about 6-8 minutes.
Season the turkey mixture with ranch seasoning, salt, and pepper. Stir well to combine.
In a large mixing bowl, combine the sautéed turkey mixture, diced bell peppers, zucchini, corn, and cherry tomatoes. Mix until evenly distributed.
Transfer the veggie and turkey mixture into a greased 9x13 inch baking dish. Spread evenly across the dish.
Bake in the preheated oven for 25-30 minutes, or until the veggies are tender.
Remove from the oven and sprinkle the shredded cheddar cheese on top. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.
