2 cups cooked turkey, shredded

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup celery, diced

1 small onion, finely chopped

3 cloves garlic, minced

1/4 cup butter

1/4 cup all-purpose flour

2 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 sheet of puff pastry, thawed

1 egg, beaten (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Vegetables: In a large skillet, melt the butter over medium heat. Add the onion, garlic, carrots, celery, and a pinch of salt. Sauté for about 5-7 minutes until vegetables are soft.

      Make the Sauce: Stir in the flour and cook for another 2 minutes, stirring constantly to create a roux. Gradually whisk in the chicken broth and heavy cream until the mixture is smooth and slightly thickened.

        Add Turkey and Seasoning: Mix in the shredded turkey, peas, thyme, rosemary, and season with salt and pepper. Cook for an additional 2-3 minutes until heated through. Remove from heat and let it cool slightly.

          Assemble the Pie: Pour the turkey mixture into a greased pie dish or a deep-dish pie plate. Unroll the puff pastry and carefully lay it over the turkey filling, trimming any excess and crimping the edges to seal. Cut slits in the pastry to allow steam to escape.

            Brush with Egg Wash: Brush the surface of the pastry with the beaten egg to achieve a golden color.

              Bake: Place the pie in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and flaky.

                Cool and Serve: Let the pot pie cool for about 10 minutes before slicing. Serve warm.
