Ingredients

6 slices of sourdough bread

3 tablespoons unsalted butter, softened

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup fresh mozzarella, sliced

1 large ripe tomato, sliced

Fresh basil leaves

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

Instructions

Prepare the Bread: Spread butter on one side of each slice of sourdough bread. This will create a crispy outer layer when grilled.

Layer the Cheeses: On three slices of bread (buttered side down), layer 1/3 cup shredded cheddar cheese, 1/3 cup shredded mozzarella cheese, and 2-3 slices of fresh mozzarella. Top each with a layer of sliced tomatoes, a few basil leaves, and season with salt, pepper, garlic powder, and onion powder.

Build the Stack: Place another slice of sourdough on top of each cheese and tomato arrangement, buttered side up. On this slice, repeat the layering with the remaining cheeses and tomatoes.

Top it Off: Finally, top with your third slice of sourdough bread (buttered side up). Press down gently to compact the sandwich.

Grill the Sandwiches: Preheat a non-stick skillet or griddle over medium heat. Place the stacked sandwiches in the skillet and cook until golden brown on one side, about 4-5 minutes. Carefully flip the sandwich using a spatula and cook the other side for an additional 4-5 minutes until melted and golden.

Cut and Serve: Once grilled to perfection, remove from the skillet, let it cool for a minute, and then cut the sandwich into quarters for easy handling.

Garnish: Serve warm with extra tomato slices and basil leaves on the side.
