4 large eggs

2 medium-sized potatoes, peeled and thinly sliced

1 medium onion, finely chopped

1/2 cup red bell pepper, diced

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

1/4 cup olive oil

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the sliced potatoes and cook for about 10 minutes, stirring occasionally until soft and tender.

      Add the chopped onion and diced red bell pepper to the skillet with the potatoes. Season with salt and pepper. Continue cooking for another 5-7 minutes until the onion is translucent.

        In a large bowl, crack the eggs and whisk them until well beaten. Stir in the chopped parsley, and season with a touch more salt and pepper.

          Once the potatoes and onion/pepper mixture is cooked, drain excess oil if necessary, then quickly add this mixture to the bowl with the beaten eggs. Stir gently to combine, ensuring the vegetables are evenly distributed.

            Wipe the skillet clean and return it to medium heat. Add about a tablespoon of olive oil.

              Pour the egg and potato mixture back into the skillet. Cook for about 5-6 minutes, or until the edges start to set.

                Carefully flip the tortilla using a large plate. Slide it back into the skillet to cook the other side for another 5-6 minutes until cooked through and golden.

                  Once cooked, slide the tortilla onto a plate and let it rest for a few minutes before slicing into wedges.
