300g Italian sausage (mild or spicy, casings removed)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (400g) diced tomatoes

150g fresh spinach, washed and chopped

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Grated Parmesan cheese for serving
