8 oz spaghetti

2 tablespoons olive oil

2 chicken breasts (boneless and skinless), diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 cup fresh spinach, roughly chopped

1/2 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Grated Parmesan cheese for serving

Cook the spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Sauté for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
