4 large ripe tomatoes, chopped

6 strips of bacon, chopped

1 medium onion, finely diced

2 cloves garlic, minced

1/2 cup brown sugar

1/4 cup apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for desired heat)

Salt and pepper to taste

Instructions
 

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and drain on paper towels, leaving some bacon grease in the pan.

    Add the diced onion to the skillet and sauté until softened and translucent, about 4-5 minutes.

      Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add the chopped tomatoes to the skillet, followed by the brown sugar, apple cider vinegar, smoked paprika, cayenne pepper, and a pinch of salt and pepper.

          Increase the heat to medium-high and cook until the mixture starts to bubble, then reduce to low heat and let it simmer. Stir occasionally and let it cook for about 25-30 minutes, or until thickened and jam-like in consistency.

            When the jam is almost done, stir in the crispy bacon bits and mix well.

              Remove from heat and allow the jam to cool before transferring it to a jar for storage.
