2 ripe nectarines, pitted and sliced into wedges

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme)

Salt and pepper to taste

2 tablespoons honey

1 tablespoon balsamic glaze (optional, for drizzling)

Fresh mint leaves for garnish
