1/2cupchocolate wafer cookies, finely blended into crumbs
1/4cupdark chocolate, melted (for drizzling)
Instructions
In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, vanilla extract, espresso, and cocoa powder.
Using an electric mixer, beat the mixture on medium speed until it forms soft peaks and is well combined (about 3-5 minutes).
Gently fold in the finely blended chocolate wafer cookie crumbs until evenly distributed.
Refrigerate the mixture for about 30 minutes to firm up slightly for easier handling.
Once chilled, scoop tablespoon-sized portions of the mixture and roll them into balls with your hands.
Roll each truffle in cocoa powder to coat evenly.
Place the truffles on a lined baking sheet and drizzle with melted dark chocolate for added flavor and decoration.
Chill the truffles for at least an hour before serving to set.
Notes
Arrange the truffles in a decorative box or a small dessert platter, and garnish with a sprinkle of cocoa powder or chocolate shavings for an elegant touch!
