Instructions
Preheat your oven to 200°C (400°F).
In a baking dish, add the halved cherry tomatoes and place the block of feta cheese in the center.
Drizzle olive oil over both the tomatoes and feta, then sprinkle minced garlic, oregano, salt, and pepper evenly across the dish.
Bake in the oven for 25-30 minutes, or until the tomatoes are blistered and the feta is melted and golden.
While the feta and tomatoes are baking, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.
Once the feta and tomato mix is done baking, remove it from the oven and mash the feta and tomatoes together using a fork.
Add the cooked pasta to the baking dish and toss everything together. If the mixture is too thick, gradually add reserved pasta water until you achieve your desired creaminess.
Stir in the lemon zest for a fresh flavor and adjust the seasoning if necessary.
