Ingredients

2 boneless, skinless chicken breasts

8 oz fettuccine pasta

1 tablespoon olive oil

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Red pepper flakes (optional, for an extra kick)

Instructions

Cook the Pasta: Bring a pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt, pepper, and Italian seasoning.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

Make the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Then, add the chopped sun-dried tomatoes and stir for another minute.

Create the Creamy Base: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until it melts and combines to form a creamy sauce. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

Combine Ingredients: Slice the seared chicken into strips and add it back to the skillet with the cream sauce. Gently fold in the cooked fettuccine, ensuring everything is well coated with the sauce. Cook for another 2-3 minutes until heated through. Adjust seasoning with salt, pepper, and red pepper flakes if using.

Serve: Plate the pasta with chicken, making sure to drizzle some extra sauce on top. Garnish with fresh basil leaves for a vibrant touch.
