Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper to taste

½ cup chipotle ranch dressing (store-bought or homemade)

2 large flour tortillas

1 cup cooked brown rice

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen or canned)

1 cup shredded cheddar cheese

1 avocado, sliced

Fresh cilantro, for garnish

Instructions

Marinate the Chicken: In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Let them marinate for at least 30 minutes for maximum flavor.

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. If you can, use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before slicing.

Prepare the Tortilla: In a large tortilla, spread a generous spoonful of chipotle ranch dressing in the center. Layer with ½ cup of brown rice, followed by ½ cup of black beans, ½ cup of corn, and a handful of shredded cheddar cheese.

Assemble the Burrito: Place sliced grilled chicken on top of the layered ingredients, followed by a few slices of avocado and a sprinkle of fresh cilantro.

Wrap the Burrito: Fold in the sides of the tortilla and roll it up tightly from the bottom up to form a burrito. Ensure all filling is enclosed.

Warm the Burrito: Place the burrito seam-side down on a lightly greased grill or skillet. Heat for 2-3 minutes on each side until golden brown and slightly crispy.

Serve: Slice the burrito in half diagonally and serve with extra chipotle ranch dressing on the side, if desired. Garnish with additional cilantro on top.
