2 tablespoons coconut oil

1 medium onion, thinly sliced

3 cloves garlic, minced

1 inch fresh ginger, grated

2 tablespoons red curry paste

4 cups vegetable broth

1 can (13.5 oz) coconut milk

2 cups fresh spinach

1 red bell pepper, sliced

1 cup shiitake mushrooms, sliced

200g rice noodles

2 tablespoons soy sauce

1 tablespoon lime juice

Fresh cilantro and lime wedges for garnish

In a large pot, heat the coconut oil over medium heat. Add the sliced onion and sauté for 3-4 minutes until translucent.

    Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.

      Add the red curry paste, stirring well to coat the onions, garlic, and ginger. Cook for 1-2 minutes to deepen the flavors.

        Pour in the vegetable broth and coconut milk, mixing until the curry paste is fully dissolved.

          Bring the soup to a gentle simmer, then add the sliced bell pepper and shiitake mushrooms. Let it cook for 5-7 minutes until the vegetables are tender.

            Meanwhile, prepare the rice noodles according to package instructions. Drain and set aside.

              Once the vegetables are tender, stir in the fresh spinach, cooked noodles, soy sauce, and lime juice. Cook for an additional 2-3 minutes until heated through.

                Season with salt and pepper to taste, adjusting the flavor as desired.

                  Serve the soup hot, garnished with fresh cilantro and lime wedges.
