1 lb (450g) chicken breast, diced

1 can (400ml) coconut milk

2 cups chicken broth

2 tablespoons red curry paste

1 tablespoon fish sauce

1 tablespoon brown sugar

1 red bell pepper, julienned

1 cup sugar snap peas, trimmed

1 cup broccoli florets

1 cup mushrooms, sliced

2 green onions, sliced

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

2 tablespoons vegetable oil

Salt and pepper to taste

In a large pot, heat the vegetable oil over medium heat. Add the diced chicken and sauté until browned, about 5-7 minutes. Season with salt and pepper.

    Once the chicken is cooked, stir in the red curry paste and sauté for another minute, allowing the spices to become fragrant.

      Pour in the coconut milk and chicken broth, stirring well to combine. Bring the mixture to a gentle simmer.

        Add the fish sauce and brown sugar, stirring until the sugar is dissolved.

          Increase the heat to medium-high and add the red bell pepper, sugar snap peas, broccoli, and mushrooms. Cook for 5-7 minutes, or until the vegetables are tender but still vibrant.

            Remove the soup from heat and stir in the lime juice. Taste and adjust the seasoning if necessary, adding more salt, pepper, or lime juice as desired.
