Teriyaki Chicken Bowls with Crispy Brussels

1 lb chicken breast, cut into bite-sized pieces

1 cup teriyaki sauce (store-bought or homemade)

2 cups brussels sprouts, halved

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

2 cups cooked jasmine rice

1 avocado, sliced

1/4 cup green onions, chopped

1 tablespoon sesame seeds

1 carrot, julienned (for garnish)

Marinate the Chicken: In a bowl, combine the chicken pieces with 1/2 cup of teriyaki sauce. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Brussels Sprouts: Preheat your oven to 425°F (220°C). In a mixing bowl, toss the halved brussels sprouts with olive oil, garlic powder, salt, and pepper. Spread them out on a baking sheet in a single layer.

      Roast the Brussels Sprouts: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until they are golden brown and crispy on the edges, tossing halfway through for even cooking.

        Cook the Chicken: Heat a skillet over medium-high heat. Remove the chicken from the marinade, letting the excess sauce drip off. Cook the chicken in the skillet for 8-10 minutes, stirring occasionally, until browned and cooked through. Add the remaining teriyaki sauce and cook for an additional 2 minutes to let it glaze the chicken.

          Assemble the Bowls: In four bowls, start with a layer of cooked jasmine rice. Top with a generous portion of the teriyaki chicken. Add the crispy brussels sprouts, avocado slices, and a sprinkle of sesame seeds.

            Garnish and Serve: Finish by topping each bowl with chopped green onions and julienned carrots for added crunch and color.
