4 boneless, skinless chicken breasts

8 slices of Swiss cheese

1 cup mushrooms, sliced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

½ cup chicken broth

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 30 seconds.

      Add the sliced mushrooms to the skillet. Cook until they are golden brown and have released most of their moisture, about 5-7 minutes. Season with thyme, paprika, salt, and pepper, then stir well. Remove from heat and set aside.

        Season the chicken breasts with salt and pepper on both sides. In the same skillet, sear the chicken breasts for 3-4 minutes on each side until they are golden brown (they will not be fully cooked).

          In a baking dish, arrange the seared chicken breasts. Pour the chicken broth around the chicken in the dish.

            Top each chicken breast with the sautéed mushrooms and 2 slices of Swiss cheese each.

              Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

                Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature should reach 165°F/75°C).

                  Remove from the oven and let rest for a few minutes before serving.

                    Garnish with chopped fresh parsley before serving.
