Ingredients
  

1 cup water

1/2 cup sugar

1/2 cup rice vinegar

1/4 cup ketchup

2 tablespoons soy sauce

2 tablespoons cornstarch

1 tablespoon minced garlic

1 tablespoon minced fresh ginger

2 tablespoons red chili flakes (adjust for desired spiciness)

1 tablespoon sesame oil

1 tablespoon lime juice

Instructions
 

In a medium saucepan, combine the water, sugar, rice vinegar, ketchup, and soy sauce. Stir over medium heat until the sugar dissolves and the mixture begins to simmer.

    In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water to create a slurry.

      Slowly add the cornstarch slurry to the saucepan while stirring continuously. This will help thicken the sauce.

        Stir in the minced garlic, minced ginger, red chili flakes, and sesame oil. Allow the sauce to simmer for an additional 5-7 minutes, stirring occasionally, until it reaches your desired thickness.

          Remove the saucepan from heat and stir in the lime juice. Taste the sauce and adjust the sweetness or heat by adding more sugar or chili flakes if desired.

            Let the sauce cool completely before transferring it to a clean jar or container for storage.
