Ingredients
  

200g pasta (your choice: spaghetti, penne, or fusilli)

100g sun-dried tomatoes in oil, drained and chopped

50g fresh basil leaves

50g grated Parmesan cheese (plus extra for serving)

50g pine nuts (lightly toasted)

2 garlic cloves, minced

3 tablespoons olive oil

Salt and pepper to taste

Optional: Crushed red pepper flakes for heat

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Make the Pesto: In a food processor, combine the sun-dried tomatoes, basil, Parmesan cheese, pine nuts, and minced garlic. Pulse until finely chopped.

      Incorporate Olive Oil: With the food processor running, slowly drizzle in the olive oil until the mixture is well-blended and smooth. If needed, add a little reserved pasta water to reach your desired consistency.

        Combine Pasta and Sauce: In a large mixing bowl, toss the cooked pasta with the sun-dried tomato pesto. If the pasta seems dry, gradually add some reserved pasta water until combined.

          Season: Season with salt and pepper to taste. If you like a bit of heat, sprinkle in crushed red pepper flakes.

            Serve: Plate the pasta and top with extra grated Parmesan cheese and a few fresh basil leaves for garnish.
