Ingredients

1 cup fresh blueberries

1 cup sparkling water

1 tablespoon sugar-free blueberry syrup

1/2 cup heavy cream

1 teaspoon vanilla extract

Ice cubes

Fresh mint leaves for garnish

Instructions

In a small saucepan over medium heat, add the fresh blueberries. Cook until they begin to burst and release their juices, about 5-7 minutes.

Remove from heat and strain the blueberry mixture through a fine mesh sieve to extract the juice, discarding the solids. Let the juice cool.

In a mixing bowl, combine the heavy cream and vanilla extract. Whip until soft peaks form, making a light and fluffy cream.

In a tall glass, fill it halfway with ice cubes. Pour in the blueberry juice then the sugar-free blueberry syrup, and top off with sparkling water.

Gently stir to mix the ingredients without losing the fizz.

Spoon the whipped cream on top of the drink for a creamy finish.

Garnish with a few fresh mint leaves and a couple of whole blueberries for an attractive presentation.
