4 sole fillets

1 cup scallops, finely chopped

1 cup lump crabmeat, picked over for shells

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 small shallot, finely chopped

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil for drizzling

Lemon wedges for serving

Instructions
 

Preheat the oven to 375°F (190°C).

    In a skillet over medium heat, add a drizzle of olive oil. Sauté the shallot and garlic until fragrant, about 2 minutes.

      Add the chopped scallops to the skillet and cook for another 3-4 minutes until they are opaque and cooked through. Remove from heat.

        In a large bowl, combine the cooked scallops, crabmeat, breadcrumbs, Parmesan cheese, parsley, lemon juice, paprika, salt, and pepper. Mix gently to combine without breaking up the crabmeat.

          Lay the sole fillets skin-side down on a clean surface. Spoon a generous amount of the seafood mixture onto the center of each fillet.

            Carefully roll the fillet over the filling, tucking in the sides to seal. Place seam-side down in a greased baking dish.

              Drizzle a little olive oil over the stuffed sole rolls and season with additional salt and pepper.

                Bake in the preheated oven for 20-25 minutes, or until the sole is cooked through and flakes easily with a fork.

                  Remove from the oven and let it sit for a few minutes before serving.
