2 large salmon fillets, skinless

1 cup fresh spinach, chopped

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

1 tablespoon olive oil

Toothpicks or kitchen twine (for securing)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium bowl, combine the chopped spinach, ricotta cheese, grated Parmesan, minced garlic, lemon juice, salt, and pepper. Mix thoroughly until well combined.

      Lay the salmon fillets on a flat surface, skin side down. Gently flatten them with a meat mallet or rolling pin if needed, to make them even and easier to roll.

        Spread the spinach and ricotta mixture evenly over each salmon fillet, leaving a small border around the edges.

          Starting from one end, carefully roll each salmon fillet tightly into a pinwheel shape. Secure the pinwheels with toothpicks or tie them with kitchen twine to hold them together during cooking.

            Heat olive oil in a non-stick skillet over medium heat. Once hot, place the salmon pinwheels seam-side down in the skillet. Cook for about 3-4 minutes until golden brown.

              Carefully transfer the pinwheels to a baking dish and cover loosely with aluminum foil. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Remove from the oven and let rest for 5 minutes before slicing.
