4 large bell peppers (red, yellow, green, or orange), diced

1 medium onion, chopped

2 garlic cloves, minced

1 lb ground turkey or beef (or plant-based protein)

1 can (14.5 oz) diced tomatoes (with juices)

4 cups vegetable or chicken broth

1 cup quinoa or rice, rinsed

2 teaspoons Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

Fresh parsley or cilantro, for garnish

1 cup shredded cheese (cheddar or mozzarella) for topping

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until the onions are translucent (about 3-4 minutes).

    Add the ground turkey or beef to the pot. Cook until browned and no longer pink, breaking it apart with a wooden spoon.

      Stir in the diced bell peppers and cook for another 4-5 minutes until they begin to soften.

        Pour in the diced tomatoes (with their juices), broth, rinsed quinoa or rice, Italian seasoning, smoked paprika, salt, and pepper. Bring to a boil.

          Once boiling, reduce the heat to low and cover. Simmer for 20-25 minutes, or until the quinoa/rice is cooked through and tender. If using corn, add it during the last 5 minutes of cooking.

            Taste and adjust seasoning as needed. If desired, stir in some extra vegetable broth for more liquid or to your preferred consistency.

              Serve hot in bowls, topped with a sprinkle of shredded cheese and fresh herbs.
