2 cups fresh strawberries, hulled and sliced

1 cup heavy cream

1 cup mascarpone cheese

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 cup brewed espresso, cooled (or strong coffee)

1 tablespoon lemon juice

8-10 ladyfinger biscuits

Cocoa powder, for dusting

Fresh mint leaves, for garnishing

Instructions
 

In a medium bowl, combine the sliced strawberries with lemon juice and 1 tablespoon of sugar. Toss gently and let sit for about 15 minutes to macerate, allowing the strawberries to release their juices.

    In a large mixing bowl, whip the heavy cream with the remaining sugar (2 tablespoons) and vanilla extract until soft peaks form.

      Gently fold in the mascarpone cheese until well incorporated and smooth, taking care not to overmix.

        Prepare a shallow dish or tray and pour the cooled espresso into a separate bowl. Quickly dip each ladyfinger into the espresso, ensuring they're coated but not soaked.

          Begin layering: Place a layer of dipped ladyfingers on the bottom of the dish, followed by half of the mascarpone mixture, then half of the macerated strawberries on top.

            Repeat the layering process with the remaining ladyfingers, mascarpone mixture, and berries.

              Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight to allow the flavors to meld together.
