1 cup fresh strawberries, pureed

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Optional: 1/4 cup powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the egg and vanilla extract to the mixture, beating until combined.

        Mix in the pureed strawberries slowly until well incorporated.

          In another bowl, whisk together the flour, baking powder, baking soda, and salt.

            Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

              Using a tablespoon or a small cookie scoop, drop dough onto the prepared baking sheet, leaving space between each cookie.

                Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden. Cookies will be soft but will firm up as they cool.

                  Once baked, let the cookies cool on the sheet for a couple of minutes before transferring them to a wire rack to cool completely.

                    If desired, dust cooled cookies with powdered sugar before serving for a sweet finishing touch.
