2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar (divided)

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 pre-made 9-inch pie crust (or homemade)

1 tablespoon unsalted butter, cut into small pieces

Whipped cream, for serving (optional)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a medium bowl, combine the sliced strawberries, ¾ cup of sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until the strawberries are well-coated and the mixture begins to macerate. Let sit for 10 minutes.

      Roll out the pre-made pie crust (if using homemade, roll it to about 1/8-inch thickness) and place it in a 9-inch pie dish, pressing it firmly against the bottom and sides. Trim any excess dough from the edges.

        Pour the strawberry mixture into the pie crust, spreading it evenly. Dot the top with small pieces of butter.

          Bake the pie in the preheated oven for 15 minutes.

            Reduce the oven temperature to 350°F (175°C) and continue baking for another 25-30 minutes, until the pie crust is golden brown and the filling is bubbling.

              Remove the pie from the oven and let it cool completely at room temperature before serving (approximately 2 hours).
