2 cups rolled oats

1 cup whole wheat flour

1/2 cup brown sugar, packed

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 cup unsalted butter, melted

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 1/2 cups fresh strawberries, hulled and sliced

2 tablespoons lemon juice

1 tablespoon cornstarch (optional, for thickening)

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, salt, and cinnamon. Mix until well combined.

      In a separate bowl, whisk together the melted butter, honey (or maple syrup), and vanilla extract until smooth. Pour this mixture into the dry ingredients and stir until just combined.

        Reserve about 1 cup of the oat mixture for the topping, then press the remaining mixture into the bottom of the prepared pan to form a crust.

          In another bowl, mix the sliced strawberries with lemon juice. If using, add cornstarch to help thicken the mixture and prevent excessive moisture. Toss to combine. Spread the strawberry mixture evenly over the crust in the baking pan.

            Crumble the reserved oat mixture over the strawberries to form the topping.

              Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the edges are bubbling.

                Remove from the oven and allow to cool completely in the pan before slicing into bars.
