1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, chilled and cubed

1/4 teaspoon salt

2 tablespoons cold water

1 cup fresh strawberries, hulled and sliced

1/2 cup heavy whipping cream

1/4 cup granulated sugar

1 teaspoon vanilla extract

2 teaspoons gelatin powder

2 tablespoons water (for gelatin)

Fresh mint leaves for garnish (optional)

Make the Tart Shells: In a medium bowl, combine the flour, powdered sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, a tablespoon at a time, mixing until a dough forms.

    Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

      Shape the Tart Shells: Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the dough to about 1/8 inch thick. Cut out circles and fit them into mini tartlet pans. Prick the bottoms with a fork.

        Bake the Tart Shells: Bake the tartlet shells for 15-20 minutes or until they are lightly golden. Remove from the oven and let them cool completely.

          Prepare the Mousse: In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it sit for 5 minutes to bloom. Meanwhile, in a blender, puree the fresh strawberries until smooth.

            Whip the Cream: In a large bowl, whip the heavy cream with granulated sugar and vanilla extract until soft peaks form.

              Combine and Set: Gently fold the strawberry puree into the whipped cream. Heat the bloomed gelatin in the microwave for about 10 seconds until melted, then stir it into the strawberry mousse mixture until well combined.

                Fill the Tartlets: Spoon the strawberry mousse into the cooled tartlet shells, smoothing the tops with a spatula. Chill in the refrigerator for at least 2 hours to set.
