2 cups all-purpose flour

1 teaspoon baking soda

1 cup freeze-dried strawberries, crushed into crumbs

1/2 cup rolled oats

1/2 cup chopped walnuts (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

      Beat in the egg and vanilla extract until well combined.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just incorporated.

          Gently fold in the crushed freeze-dried strawberries, rolled oats, and chopped walnuts (if using).

            Scoop tablespoon-sized amounts of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, which is perfect as they will set as they cool.

                Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
